Need Suggestions and Ideas, Please!
Okay, people. I need your help. More specifically, I need ideas and suggestions as to quick, easy, tasty, NUT FREE meals for me and my kid. I'm burned out on eating restaurant/fast food. Then we did the chef salad thing for a while. Everything in my own library of recipes that is fast and simple has been done over and over again. I need your recipes! If you're a member of this blog, please post your favorite quick and easies as a new post. If you aren't, please add it in a comment. I'm too busy to cook and oh so tired of what I've been doing for dinner up to now. Your help is much appreciated!

It is for parents fo children with dairy, egg & nut allergies, including 41 super quick meals for tired mothers by Theresa Kingma.
My son has an egg allergy which is why I have the cookbook.
The pancakes are amazing very light and fluffy!!!
The Pancakes recipe
2 C flour
2 TBLS sugar
4 tsp baking powder
1/2 tsp salt
1 1/2 TBLS water, 1 1/2 TBLS oil, 1 tsp baking powder (mix these 3 ingredients together in small bowl)
2 C soymilk (can use reg cow's milk)
4 TBLS vegetable oil
1 1/2 tsp vanilla
In a large bowl whisk together flour, sugar, baking powder, and salt. Set aside.
In s separate bowl, combine water/oil/baking powder mixture, milk, oil and vanilla.
Add wet ingredients to dry ingredients and stir just until blended, but still lumpy.
Cook on a hot griddle coated with dairy-free cooking spray until golden brown on each side.
Serve & Enjoy!

uncle ben 90 second rice in the bag with the cooked chicken from the meat dept (over roasted or honey roasted..diced of strips) they come in a bag. makes a good quick meal that easily feeds two.
