Make Ahead

I am going for Montessori Training next month (in two weeks) and am thinking about what I can do to help Daniel eat well while I'm gone. I'll be gone for three weeks, home on the weekends. Do you know any good sources for make-ahead meals? He's a good cook, and will be fine, but I'd like to help out.

I removed the last comment because it was mean and did nothing to contribute to the intended dialogue of Ann's post. I see nothing wrong with a person showing her love and concern for her husband by making sure there's nutritious meals for him to have while she's gone. If the situation were reversed, I'm sure Daniel would do the same for her.

That being said, I would advise you to follow some of Tara's recipes, both here and on her own blog, which deal several items she makes in large batches and then freezes for when it is needed. Make several different kinds, then Daniel will have a wide variety from which to choose and nuke.

Another (simpler) option would be to pick up some bread and lunchmeat and some cans of soup so he can fix himself a quick sandwich and soup combo for dinner. A bag of salad, a bag of baby spinach, shredded cheese, ham (or chicken) cubes, and whatever other veggies he likes raw can quickly be thrown together for a delicious chef's salad. Another easy solution is Lean Cuisine frozen dinners. Some of them are really quite tasty!
