Curry In A Hurry for Tara

Here is one of the best and easiest chicken curry recipes ever, and it's not in my own words, which makes it even better. It's a Rachael Ray recipe. I think it was the first thing I cooked for Daniel when we got married, and he was very impressed. He couldn't believe an "American" had written the recipe. Have fun! Then have chicken curry!

Simply for the amusement of the rest of you, here is the email I sent Ann when she alerted me to this posting about curry:

Okay, here goes! This is why I have never had or made curry.
What are and where do I find:
Coriander seeds
Cumin seeds
Basmati rice (Would the Indians come and get me if I used plain white or brown rice?)
Curry paste
Mincemeat
Can regular table salt be subbed for the coarse salt?
I don't like coconut, do you have to use it?
Is a scallion just a fancy word for a green onion?
What the heck is mango chutney?

Hey, at least I can pronounce all the ingredients!!! :)

Thanks for the tutorial! I may get brave one day. Course, I doubt my family will approve of my being brave due to their native Minnesotan-ness, but they'll survive if it has rice in it.
